4 fish fillets

1 bay leaf
1 tablespoon of finely chopped onion
2 tomato slices
salt and black pepper to taste

Place the fish fillets in a baking dish
Mix all remaining ingredients except for the tomato and refrigerate for 2 hours
Arrange the tomato slices on top
Season with salt and black pepper to taste and bake in a preheated moderate oven (350°F) for 20 minutes or until the fish is cooked
Serves 2-4 people.
