Boil the sweet potatoes and puree them
Mix with a wooden spoon until smooth
Add in butter, salt, pepper to taste, and two lightly beaten eggs mixed with two egg yolks
Mix well until the mixture is light and airy
Pipe through a piping bag and form circles around the platter where the meat will be served
Place in a hot oven to lightly brown
Serve the meat on the platter and serve
