Ingredients: 4 sweet potatoes, sliced; 100 g of bacon, cubed; 1 tablespoon of butter; 1 onion, diced; 200 ml of heavy cream; 4 eggs; 250 g of cheddar cheese, grated; 1 tablespoon of thyme; Salt and pepper to taste

Directions

Fry the bacon in butter

Remove excess fat and combine with sweet potato and onion

Cook for 3 minutes and add half of the heavy cream

Cook for an additional 5 minutes

Remove from heat, add remaining ingredients

Transfer to a greased baking dish and bake at low heat for 25 minutes or until golden brown.
