1 x 120g grated Parmesan cheese

Preheat the oven to 250°C (very hot)
Wash the potatoes with their skins and dry well
Place them in a large baking dish and put them in the preheated oven for about 1 hour or until they're soft
Don't turn off the oven
Let it cool down slightly, cut each potato into a slice (a lid) and remove the pulp with a spoon, without damaging the skin
Reserve the pulp and skins separately
Mix the potato pulp well with yogurt and grated Parmesan cheese, mashing with a fork
Taste and season with salt
Fill the potatoes with the obtained mixture, using a large pastry bag or a spoon, and sprinkle with caraway
Put the baking dish back in the oven for another 15 minutes
Serve hot
