1/2 cup of chopped mushrooms
3 tablespoons of butter
1 tablespoon of small bacon cubes
1 tablespoon of finely chopped green onion
8 medium potatoes
4 cloves of garlic
Salt and pepper to taste

A preheat the oven to medium temperature
Wash the potatoes and dry them
Wrap each potato separately in buttered aluminum foil
Do the same with the garlic cloves
Place them on a baking sheet and bake for 1 hour
In a skillet, cook the bacon over medium heat for about 1 minute
Remove the potatoes and garlic from the oven
Scoop out most of the pulp from each potato, cutting along its length
Mash the removed pulp with a fork and add the butter, bacon (save some to decorate), and mushrooms
Mix well
Press the garlic cloves with a fork and mix their pulp into the potato mixture
Season with salt, pepper, and green onion
Stuff each potato with the seasoned mixture
Bake in the oven at medium temperature again for 15 minutes and serve.
