Beat the egg yolks
Gradually add the sugar while beating continuously
Add the lemon juice and water
Simmer over low heat or in a double boiler
Cook, stirring constantly, until the mixture thickens slightly
Soak the gelatin in 1/4 cup of cold water
Add to the warm mixture
As soon as the mixture thickens, add the whipped cream
Pour the mixture into a 4-cup mold or a lightly oiled and chilled bowl
Refrigerate for several hours or overnight before serving
