Set aside two onion slices and finely chop the rest
Mix together the beef, chopped onion, mustard, paprika, pepper sauce, salt, and pepper
Divide the mixture in half and shape into two patties
Place a slice of onion on top of each patty
Break an egg directly onto each slice of onion
Serve chilled, accompanied by well-chilled beer
