Peel the bananas and cut them in half lengthwise
Place them in a bowl, sprinkle with sugar, add some lemon juice, grated orange peel, and rum
Let them rest for an hour
Remove them from the bowl and dip them into the light batter
Fry them in abundant oil
Place them on a platter lined with paper towels and dust with confectioner's sugar
Once they're golden brown, remove them from the oil
Preparation of the batter: mix the flour with beer and salt to obtain a batter that resembles a thin cream
Add oil and let it rest for an hour
Beat the egg white until stiff and mix it into the previous mixture
Use it immediately for frying
You can add, just before serving, 1 tablespoon of rum
