Preheat the oven
Butter a baking dish
Mix the breadcrumbs with salt and pepper
Peel the eggplant and cut it into 1 cm thick slices
Dip the slices in the beaten egg and then coat in breadcrumb mixture seasoned with salt and pepper
Arrange in the baking dish or shape
Bake uncovered for 15 minutes, then cover with aluminum foil and bake for another 15 minutes until the eggplant is tender
Serve in 4 portions.
