Preheat the oven to a low temperature
Peel and slice the eggplant into 0.5 cm thick rounds
Slice the tomatoes in the same way
In a baking dish distribute the eggplant and tomato slices
Top with minced garlic and olive oil, and sprinkle with Parmesan cheese
