Drain the beets and reserve 3 cups of the cooking liquid
Mix this liquid with the vinegar, onion, sugar, salt, lovage salt, and rosemary in a medium saucepan
Bring to a boil
In a large bowl, mix the beets with the liquid above
Let it rest for one day before serving.
