8 thin beef tenderloin or veal cutlets (not too large)
4 slices of ham
8 slices of Swiss cheese
1/2 cup all-purpose flour
1 egg, lightly beaten
1/4 cup milk
1/4 cup butter or margarine
1 cup breadcrumbs

1 cup breadcrumbs
Cover 4 beef cutlets with a slice of ham and two slices of Swiss cheese (the cheese and ham should be slightly smaller than the meat)
Cover with the remaining cutlets and press well around the edges to seal
Dip these sandwiches into flour, then in the egg mixture, and finally in breadcrumbs
Melt butter in a frying pan
Add the beef and fry over medium heat for about 10 minutes, turning once
Serve hot.
