Season the steaks with garlic, salt, and pepper
Fry them in butter until desired doneness
Remove the steaks and set aside
In the remaining butter in the pan, cook the onion over low heat
Add the wine and bring to a boil, reducing the volume by half
Remove from heat, strain through a fine-mesh sieve, and return the glaze to the pan
Add the mustard, paprika, and cornstarch, whisk until smooth, and serve with the steaks
Serve 4 portions.
