Grind the corn flakes into a breadcrumb-like consistency
You can do this by putting them through a meat grinder, using a blender or simply rolling them up in parchment paper and running over them with a pasta machine
Bat together the milk and egg, then add the salt and pepper
Pound the vitela cutlets until they are nice and thin
In 6 of them, place slices of cheddar cheese and top with another cutlet
Heat the oil in a frying pan
Place the cutlets in the pan, pressing the edges together with a fork to join the two parts
Remove from heat
Dredge in flour, then dip in the egg mixture and coat in the corn flake crumbs
Fry.
