Season the beef with salt, pepper, and lemon juice
Set aside
Place slices of onion, eggplant, and zucchini on each steak
Roll up and secure with toothpicks
In a pan, heat the olive oil and sear the steaks on both sides
Add tomato sauce, water, and simmer for 20 minutes.
