Heat a 25 cm non-stick skillet with 1 tablespoon of butter
Cook the onion until translucent
Remove the onion with a spatula, leaving the butter in the pan
Mix the onion, mashed potatoes, and egg together
With wet hands, shape into patties about 7 cm in diameter
Dredge in flour
Add the remaining 3 tablespoons of butter to the skillet
Heat over medium heat
Add the patties and fry for 5 minutes on each side, until golden brown
Yield: 12 fritters.
