2/3 cup unsalted butter at room temperature
1 cup all-purpose flour (sifted into a cup)
1 egg
1 teaspoon vanilla extract
1 cup all-purpose flour
1 teaspoon cinnamon
1/2 teaspoon salt
1/2 teaspoon baking powder
2 1/2 cups rolled oats

Cream the butter with the sugar until light and fluffy
Add the egg and mix well
Add the vanilla extract and mix
Sift together the flour, cinnamon, salt, and baking powder
Combine the creamed mixture with the dry ingredients and mix well
Add the oats and mix
Shape into balls about 1 tablespoon in diameter
Press the balls to form a biscuit shape
Place on a microwave-safe plate or ceramic dish
Cook in batches of 4 biscuits at high power for 3 minutes or until soft
Remove from microwave and let cool completely
Serve with ice cream or gelato
Yields 30 biscuits
