3 egg whites

1 tablespoon of ground cinnamon
2 cups of chopped pecans

Preheat the oven
Whip the egg whites until foamy
Gradually add the powdered sugar, lemon zest, and cinnamon; whip for 5 minutes
Reserve 3/4 cup of this mixture
Add the remaining mixture to the rest of the ingredients
Roll out the dough on a floured surface
Make the dough very thin
Cut into star shapes with a cookie cutter
Place on a baking sheet lined with parchment paper, sprinkling each star with 1/2 teaspoon of the reserved mixture
Bake for about 10 minutes, or until golden brown
Let cool for approximately 40.
