Grease a 30 x 45 cm baking dish with butter, line with parchment paper and grease the parchment as well
Dust with Parmesan cheese and set aside
Preheat the oven to 180°C

In a stand mixer, beat the egg whites until stiff peaks form (approximately two minutes)
Add the yolks and beat until double in volume
Add the remaining ingredients and mix well
Place in the prepared baking dish and bake until firm (about 30 minutes)

Remove from the oven, let cool slightly, and unmold onto a clean cloth
Remove the parchment paper
With the help of the cloth, roll the mass into a smaller ball
Carefully place it onto a serving plate
Let it cool completely, slice, and serve.
