In a large bowl, combine the flour, butter, brown sugar, ginger, cinnamon, and salt
Mix until crumbly with your fingers
Create a depression in the center, add half the water at a time, and mix
Gently knead until you achieve a homogeneous mixture
If needed, add the remaining water
On a lightly floured surface, roll out the dough to 3 mm thickness
Precare the oven to 200°C (hot)
Cut the dough into 5.5 cm diameter circles using a cookie cutter
In an ungreased baking sheet, bake for about 15 minutes, or until the bottoms are golden brown
Remove from the oven and baking sheet
Await cooling, then store in an airtight container
