100g grated chocolate

Beat the two egg whites in a mixer until they become frothy
Gradually add the confectioner's sugar, sifted to remove any lumps, and continue beating with the mixer until the mixture thickens and holds its shape when lifted off the beaters
Process the pecans or hazelnuts in a blender and combine with the egg mixture
Grate the zest of 1/2 lemon and add it to the mixture
Then, squeeze the juice from the same lemon over the mixture
Add the grated chocolate and finally, the chopped dark chocolate
Shape small truffles with the mixture and coat in chopped dark chocolate.
