Melt the chocolate in a double boiler
Combine the water and stir until it becomes homogeneous
Let it cool slightly
Beat the egg whites until they thicken
Add the melted chocolate
Beat the egg whites until stiff peaks form
Add the sugar, vanilla extract, cinnamon, and salt, stirring continuously
Combine the chocolate mixture with the whipped cream
Place in two ice cube trays of the freezer and let it freeze until the edges are frozen solid
Gently mix the mousse to ensure even consistency
Replate into the ice cube trays and maintain in the freezer until firm
Serve 6-8 portions
