In a bowl, mix together the sweet potato, egg, butter, salt, and flour until it forms a pliable dough that can be shaped by hand
Shape into balls and fill with cheese curd cubes
Coat in beaten eggs and then in bread crumbs
Refrigerate for an hour
Fry in hot oil until golden brown
Serve immediately, nice and hot
