Boil the sweet potatoes in a pot with water until they're soft
Drain, pass through a ricer, and place in a bowl. Reserve
Cut the sweet potato peel into strips and add to the sweet potatoes
Add the sugar, beaten egg, and vanilla, and mix well
Cook over low heat, stirring constantly, until the mixture detaches from the bottom of the pot
Let cool and shape into balls with greased hands
Pass through a mixture of sugar and cinnamon and place the fritters in a greased baking dish
Bake in a preheated medium oven for 20 minutes, approximately.
