In a large bowl, mix together the rice, flour, Parmesan cheese, milk, salsa, yeast, salt, and eggs to obtain a homogeneous mass
Cover and let it rest at room temperature for an hour or until the mixture becomes consistent
In a medium pan, heat the oil over high heat
When hot, fry spoonfuls of the mass until the fritters are golden brown
Remove with a slotted spoon and drain on paper towels
Serve warm.
