6 tablespoons of butter or margarine, cut into small pieces

3 eggs at room temperature
Fillling:
2 tablespoons of olive oil or vegetable oil
2 cloves of garlic, minced
1 medium onion, cut into small pieces
350g fresh mushroom
salt and black pepper to taste

Bake the oven at moderate temperature (180°C)
Grease a baking dish and dust with flour
In a saucepan, combine water and butter or margarine
Let it boil, then reduce heat and simmer for 5 minutes
While the mixture is heating up, sift together the two flours and salt
When the water is boiling well, add the flour mixture all at once
Reduce heat and stir constantly until the dough comes off the sides of the saucepan
Remove from heat and let it cool for 5 minutes
Add eggs one by one, stirring well after each addition
One egg should be fully incorporated into the dough before adding the next
Fry in batches (1/2 tablespoon) in a greased baking dish, leaving about 2cm space between each batch
Bake for 30 minutes or until golden brown
Turn off heat and let it cool in the oven for 10 minutes
Remove and let it cool completely
Carefully cut in half and remove any excess dough
Let it dry completely
Fill just before serving with the prepared filling, as follows:
Heat the olive oil or vegetable oil in a saucepan and add garlic and onion
Fry until lightly browned
Add mushrooms and simmer for 10 minutes, stirring occasionally
Season with salt and black pepper to taste
Dissolve flour in a little water and add to the saucepan, stirring constantly
Cook until thickened slightly
Remove from heat and blend in a processor or blender
Add grated Parmesan cheese and mix well
Let it cool before using
