2 cups of milk

1/2 cup of sugar

Lime zest from 1 lime
A pinch of salt
150g of rice
1/2 cup of raisins
1/3 cup of all-purpose flour
2 eggs
2 tablespoons of rum
1 tablespoon of active dry yeast
Frying oil
Cinnamon to sprinkle

Bring the milk, water, sugar, butter, lime zest, and salt to a simmer
Add the rice and cook over low heat until all the liquid is absorbed
Let it cool
While that's happening, soak the raisins in warm water
Drain the raisins and add them to the rice
Add the flour, egg yolks, rum, and yeast
Mix well and set aside
Beat the egg whites until stiff and fold them gently into the rice mixture
Fry the fritters by spoonfuls in hot oil until golden brown
Remove with a slotted spoon, let drain, and sprinkle with cinnamon.
