Whisk together the sugar, cornstarch, and salt; gradually add in the hot milk, whisking constantly until it thickens
Cover and cook for 15 minutes
Beat in the egg yolks and slowly pour in the warm mixture, whisking always
Cook for an additional 5 minutes
Just before removing from heat, add in the lemon juice, zest, and butter; whisk well and let cool
Pour into the pre-baked pie crust and top with meringue
Bake at medium temperature for 15 minutes until golden brown
Let cool before serving
