    EGG - Cook 3 eggs for 30 minutes to make them very hard. Remove the shell from each egg by cutting it into 4 pieces lengthwise. Separate the white from the yolks. Then, thoroughly mash the yolks, adding finely chopped parsley, pepper, and salt. Take small portions of mashed potato dough, fill with a piece of egg white and a bit of mashed yolk. Close the dough to form the balls. Dip in beaten eggs mixed with salt, then coat with breadcrumbs and fry in batter.
