1/2 kg of cooked and mashed sweet potatoes
1 tablespoon butter or margarine - 15 g
1 egg, beaten
1 medium-sized onion, finely chopped - 90 g
Salt to taste
1 tablespoon all-purpose flour - 10 g
1/2 teaspoon chopped parsley
2 tablespoons milk - 30 ml
1/4 cup cornstarch - 45 g
4 tablespoons vegetable oil for frying - approximately 60 ml

Mix together all the ingredients, except for the cornstarch and vegetable oil
Form into balls, using about 2 tablespoons per ball
Dip in cornstarch and fry in vegetable oil over medium heat until golden brown on all sides
Drain and serve warm
Yield: 30 fritters.
