Boil the sweet potatoes and mash them
Combine with butter or margarine, chopped onion, eggs, and grated Parmesan cheese
Season to taste with salt
Add more or less 3 tablespoons of all-purpose flour to achieve a dough-like consistency
Open up some of the dough in your hand and place a small piece of prosciutto, black olive, and raisin in the center
Close the fritter, dip it in beaten egg and all-purpose flour, then coat with breadcrumbs
Fry in hot oil.
