1 Fry the bacon in its own fat, drain and reserve
Peel the potatoes and grate them coarsely
Wash the potatoes under running water, let them drain and dry with a paper towel
2 Mix the potato with the onion, fried bacon, flour, and eggs
Season with salt and black pepper
4 Place the fritter mixture in hot oil, spoonfuls, and fry until golden brown
Drain on paper towels and serve immediately.
