2 tablespoons milk, approximately
oil for frying

Peel the eggplant and cut into cubes
Cook until tender
Drain
Mash well
Add the egg, onion, and season to taste
Mix in the flour, yeast, and add to the eggplant mixture
Add milk to achieve a smooth batter
Let the batter fall onto spoonfuls in plenty of hot oil
Fry until golden brown on all sides
Drain
Serve 4 portions.
