In a bowl, whisk together the eggs, Parmesan cheese, flour, and yeast until smooth
With the hands greased with oil, fill one portion of dough with a chunk of pineapple and another with Minas cheese
Close and shape into a ball
Do the same with the remaining dough and filling
In a deep frying pan, heat the oil well and fry the dumplings rapidly (four at a time) until they're golden brown on all sides
Drain on paper towels and then coat in a mixture of grated Parmesan cheese and cinnamon
Serve hot or warm.
