In a deep bowl, sift the fava beans with the wheat flour and add the scalded milk
Mix well with a wooden spoon and let it rest
Add the egg yolks, butter, and a pinch of salt, beating well after each addition
At this point, beat the whites until stiff and fold them into the mixture, stirring gently
Heat the oil in a small and deep frying pan and fry the mixture by tablespoonfuls
Fry a few fritters at a time
Remove them with a slotted spoon and let them drain on absorbent paper
