1 small green jackfruit

1 teaspoon of ground cumin

4 diced tomatoes (peeled)
3 tablespoons of tomato puree

Open the jackfruit and separate the pods and pulp
Cook them separately, clean, in water, until they are tender
Drain and reserve
Prepare the dough: Blend or process the onion, garlic, ginger, and turmeric powder in a liquidizer or processor to obtain a homogeneous mixture
Add to a bowl and mix with the jackfruit pulp and remaining dough ingredients
Mix well and shape into flat patties
Fry them slowly in hot oil, draining on paper towels. Reserve
Prepare the sauce: Heat the oil together with the bay leaf, cinnamon stick, cloves, sweet basil, and ground cumin
When it starts to simmer, add the onion and fry until golden brown
Add the garlic and ginger, stirring constantly, and if it starts to dry out, add a little water
Join the cooked pods and remaining sauce ingredients (except garam masala)
Simmer, stirring occasionally, for 30 minutes
Add about 3 cups of water, gradually, until the sauce thickens
Add the garam masala
Mix well and combine with the prepared patties
Cover the pan and cook until hot
Arrange in a shallow dish and dust with coriander
Serve 12 portions
Note: To clean the jackfruit pod, remove the pulp surrounding the seed and the brown skin.
