In a bowl, combine the flour, Parmesan cheese, and yeast
In a blender, combine the milk, eggs, and sweet potatoes
Blend at high speed for 6 seconds, being careful not to overmix
Pour this mixture over the flour and mix until well combined
Drop spoonfuls of this batter into hot oil (use a tablespoon) and fry the fritters until golden brown
Remove the fritters with a slotted spoon
Place on paper towels and serve warm
If desired, sprinkle the fritters with Parmesan cheese.
