1 Cut the yucca into chunks, peel and boil in enough water to cover it
2 Drain, mash or press through a potato ricer
Mix well with the egg, salt, scallion, and all-purpose flour
3 Shape the dough into balls using 1 1/2 tablespoons of dough each
Place a cube of mozzarella cheese inside each ball
Dip each ball in the lightly beaten eggs and then in the bread crumbs
4 Fry in hot oil at medium heat until golden brown, removing with a slotted spoon and draining on paper towels.
