Mix the grated corn, milk, egg yolks, and onion in a bowl and beat lightly
In another bowl, sift together the flour, baking powder, salt, and black pepper, then add to the corn mixture and mix delicately
Beat the egg whites until stiff peaks form, adding a pinch of salt
Add to the corn mixture and fold gently
Heat the vegetable oil in a pan and fry a spoonful of the corn mixture until golden brown and crispy
Remove with a skimmer and place on absorbent paper
Keep the fried fritters warm in the oven while finishing frying them
