Fry the green onion in butter or margarine until tender, but not golden
Mix with sweet potato purê
Season well with salt and black pepper and add the egg
Shape into balls or croquettes, dusting first with seasoned flour, then with egg, and finally with breadcrumbs
Fry in hot oil until golden brown
Drain on paper towels
These croquettes can be served with some leftover chicken, prosciutto, or cooked meat, finely chopped
Serves 4 to 6 people
Yields 15 croquetes.
