Peel the sweet potatoes and grate them
Soak the potatoes in cold water, then squeeze out as much water as possible
Add the potatoes, salt, pepper, onion, and parsley to the mixture at the same time
Add the grated sweet potatoes and eggs, mixing well
Shape into dumplings, gently rolling them in flour
Drop into boiling salty water, cover well, and cook for 15 minutes
These "dumplings" are excellent served with roasted chicken or beef.
