2 kg of sweet potatoes
1/2 cup (ch) of fresh cream
1 and 1/2 cups (ch) of milk
1/2 cup (ch) of butter
1/2 cup (ch) of grated cheese
Salt and white pepper to taste

Boil the sweet potatoes in cold water, until they're tender
Drain them
and return them to the pot for another minute, shaking the pot, to remove all excess liquid. Reserve
Warm the cream mixing it with milk, without boiling
Mash the sweet potatoes and mix in butter and grated cheese
Add the milk gradually
Mix well and season with salt and white pepper
Serve decorated with parmesan cheese cut into thin slices.
