Cook the potato with its skin on, then drain, peel, and mash it while still warm
While the potato cooks, prepare the remaining ingredients: Cut the cod into small pieces and process them in a food processor or blender
Wash and chop the green onion into rings
Mix the mashed potato, cod, green onion, flour, butter or margarine, and cracker crumbs together until well combined
Knead the mixture until it forms a smooth dough
Season to taste with salt, black pepper, and lemon juice
Let it cool
Form the dough into small balls using 2 tablespoons of water
Fry them in hot oil for about 3-4 minutes or until golden brown
Drain on paper towels
Serve warm with Avocado Sauce (recipe above) and shredded coconut to taste
Yield: 48 pieces.
