3 cloves of garlic, minced
1 medium onion (100g), finely chopped
250g of siri meat
1 tablespoon of parsley or thyme, finely chopped

6 slices of bread, crumbled
2 eggs, lightly beaten

In a medium pan with the olive oil, sauté the garlic and onion over high heat until slightly softened (about 2 minutes)
Add the siri meat, parsley or thyme, red pepper flakes, and salt
Stir and cook for 3 minutes
In a large pan, heat the oil over high heat
Meanwhile, in the pan with the siri, add the bread and mix well
Remove portions of the dough with a spoon and shape into balls
Dip the balls in the beaten egg and then in the flour
Fry the balls in hot oil, 10 at a time, until golden brown
Remove with a slotted spoon and drain on paper towels
Serve immediately
