Cook the azuki beans and drain (use the broth to prepare a soup)
Blend the azuki beans in a blender or food processor until it forms a paste
Place the bean paste into a saucepan with sugar and bring to a boil, stirring constantly until thickened and the bottom of the pan is visible
Remove from heat and let cool
For the dough: in a bowl beat the egg, then add butter and milk, beating well
Add flour, yeast, and blend well until a smooth batter forms
Shape into balls about 2 cm in diameter, flatten slightly, and place a spoonful of filling in the center
Fold the dough over the filling to form a ball, and use food coloring and a toothpick to create a design on each fritter
Cook the fritters in a steamer, leaving a gap of about 3 cm between each one, taking care not to let them stick together
Cook for 10 minutes, remove from steamer and let cool on a wire rack
Yields approximately 25 units.
