2 tablespoons freshly squeezed lime juice

Make the batter: Beat the butter and granulated sugar until light and fluffy
Add eggs, one at a time, beating well after each addition
Add vanilla extract and beat until combined
In a separate bowl, whisk together flour and yeast
Gradually add dry ingredients to the wet ingredients, alternating with milk, beginning and ending with dry ingredients
Beat just until combined
Grease a 30x45cm baking dish with parchment paper and butter it well
Pour the batter into the prepared pan and bake in a preheated oven at (180°C)
For the glaze: Beat all ingredients together until smooth and spreadable
Tint with special food coloring to achieve desired colors
To assemble the cake: Cut 8 rectangles
Spread gelatin of your choice over 4 rectangles, cover with remaining rectangles, and top each mini-cake with glaze
For the carriages, use plastic cones
The little critters will love it!
For the wheels, use round cookies
For the base cake, you can use the same recipe as for the cars or a plain white cake frosted with white glaze and sprinkled with green tinted coconut flakes.
