Sift together in a bowl the potato flour, sugar, and active dry yeast
Add the melted butter or margarine, one egg at a time, the strawberry puree or blended strawberries, lemon juice, and mix everything with a wooden spoon until it becomes a smooth batter
Next, whip the egg whites until stiff and fold them delicately into the previous mixture
Grease an high loaf pan and dust it with cake flour
Bake in a medium oven for 35 minutes
The cake is ready when you insert a toothpick and it comes out completely dry
Instead of strawberries, you can also use cherries or apricots, according to your taste.
