1 kg of zucchini cut into slices

1/4 cup of melted butter or margarine
3 eggs
1/2 cup of milk
1/3 cup of grated Parmesan cheese
2 tablespoons of all-purpose flour
salt and black pepper to taste
1/2 cup of grated Parmesan cheese

In a large skillet, sauté the zucchini and onion in butter or margarine until tender
In a large bowl, whisk together eggs, milk, 1/3 cup of Parmesan cheese, flour, salt, and black pepper
Add the cooked zucchini and onion to the egg mixture
Pour into an ungreased 9x13-inch baking dish
Sprinkle with remaining 1/2 cup of Parmesan cheese
Bake in a moderate preheated oven (350°F) for 35-40 minutes or until golden brown
Serves 4 to 6 people
Serve with whole wheat rice.
