3 cups all-purpose flour sifted

1 cup papaya, cooked and finely chopped

1/2 teaspoon vanilla extract

Covering:

To make the cake, mix together the flour, baking soda, salt, cinnamon, and cloves
Sift everything together
Batter the butter, add the papaya to it gradually, beating well
Add the eggs without beating and the honey, mixing well
Mix well
Add the buttermilk alternately with the dry ingredients, mixing well after each addition
Mix well
Add the black plums and mix well
Pour into two 24 cm diameter greased and floured pans
Bake in a moderate oven (170°C) for about 35-40 minutes
Let it cool and make the filling: bring all ingredients to a simmer, stirring constantly until thickened
Let it cool and fill the cake
Make the topping: mix together the flour, honey, and egg white
Heat gently in a bain-marie, beating with an electric mixer until thickened
Remove from heat and add vanilla extract
Continue beating until the mixture has the consistency of spreading
Cover and decorate the cake with plums and papaya pieces
Serves 20 people.
