Beat the egg whites until stiff with a pinch of salt
In another bowl, beat the egg yolks with sugar until pale and fluffy
Mix in the ground almonds and then alternately add the flour and egg whites
To grind the almonds, dry them in the oven for 5 minutes
Once they have cooled, pulse them in a food processor to achieve a fine crumb
Grease a mold with butter and line the bottom with parchment paper
Butter the parchment paper well and dust the inside of the mold with flour
Spread the batter into the mold and bake the cake in a low oven.
